I'm quite happy to help design, and provide ideas.
When working with my coding friend James, I tend to be the Steve Jobs of the team, as I can see the finished project before we start.

Additional Ideas (and the old ones):
-IM (between members of MT, on their iPhone or computer)
    -IRC (connecting to moofspeak)
    -Forums
-Ability to turn images off, to save bandwidth
-Information comes down to iPhone as small XML files (or of the sort).. (for easy integration to vBuliten)
    -Member profiles
-MacTalkLive (for events, ie: MacWorld/WWDC, live text feeds + images)

I've still got a few others, but I need to think about them a lil more, as they are really vague.

The problem with vBulletin is the SOAP API (the likely method you would use to integrate) is old and possibly buggy. It'd be interesting to try; it'd be nice to do things like being able to scroll directly to posts in a thread much like you can scroll directly to a given letter in AB.

I am waiting for my dev application to be processed by apple. A project like this would be fun to work on, and potentially useful.

The difference is that's a website, this would be an application.

We also have many people who have offered to help, and as stated by timothy, the Application being available in the App store would give great publicity to the site.

But, it all comes down to what Decryption, Disko and Currawong say.

This has plenty of potential to be something really, really cool.
As you've said, this isn't going to be a website, it's going to be an iPhone App. I was thinking we could have the app as a base station. By that I mean when you open the app, your displayed with a number of options, e.g Chat, News, Hot Topics.. These options could then link to custom interfaces representing the information (not the website)

Also, I'm happy to help out with the interface design.

    KILLER IDEA.
iPhone has a camera. We could sort out some sort of plan/deal with a hosting co (ie: infinite), and allow a Photo Upload... even if someone works on an API for flikr or something..?

Also, I'm thinking we make the app looks simple, similar to whats in the iTunes Music and App Stores (iPhone version), and FaceBook app.
    ie:
Menu Bar at the top, content, Menu Bar at the bottom.

Menu items at the top would change dependent on the page that was being viewed. On the home page, would be "Settings", so you could change options, ie: images (I/0), On forums you could have "< Back to category" and "Post Reply". Clicking on an entry would quote it.

Menu items for the bottom: Home, Forums, talk, Search, Live.
If more items were to be added to the bottom, simply add a "... More", and allow the option to edit the menu.

Still millions of ideas floating around in my head... :P

EDIT: Working on my "Mock Up" now.

So far I'm thinking this App icon but without the "Australian community" text?

Mad. We need to have a really simple interface with a home screen that has

    About
    Forums
    Blogs
    Podcast
    Donate

And no matter what page your on, it has to have a direct button back to the main screen, like the home button. Or, just tap the mactalk logo at the top.

Ah guys - before you go spending time and energy on this, you might want to actually see if it's something I would want

I love your enthusiasm for the forums, but perhaps this isn't the best expenditure of your time. A Cocoa based app is pretty silly for this sort of stuff - everything you're doing communicates to the web.
