Hi,

If I end up with a dud battery in whatever G3 powerbook I end up scoring... what are the options?

I presume there's avenues other than Apple Australia? (Couldn't find a battery for a G3 on the Apple Store anyway).

What does one do when their powerbook battery doesn't work?

A couple of choices, the battery reconditioners "Battery Factory" of whatever your nearest one is called, can replace the cells - a send away in most cases, I think you are looking around $170ish.

Several online places also sell replacement batteries as I suspect would your local or nearest Apple Reseller. Either way I think the price is about the same.

Of course if you don't plan to use it mobile (easy as you can plug in an external monitor) it may be an expense you can live without.

Repacking the cells costs as much as a new battery so you can forget about that avenue. You can go non-genuine and will probably find one on ebay for about half the price Apple charge.
