Hopefully someone who installs a few servers will be able to help. I was just wondering if Apple or a third party place had any good resources (ie. documents) about installing OS X servers and how things work etc.

I am guessing the OS X server manaul would be a good start, but they are usually big and full of stuff I don't need to know. So if someone knows of a watered down version that could help, please point it out.

I have always found Apple's documentation to be pretty good in this area.

If you don't mind spending a little bit of money (about $40) you could try this book:
Mac OS X Server 10.3 Panther: Visual QuickPro Guide

I'm currently using it to teach myself OS X Server. Seems to be pretty good. Covers a wide range of services and configuarations options, but not to great depth. Is the sort of book that will get you up and running, without the indepth coverage of more advanced information.

Other than that, I'd go with Devski's suggestion regarding the documentation at http://www.apple.com/server/documentation/. I've had a look through it, and it is very good. There is even a "Getting Started" guide that will get you up and running quickly.

The Apple doco is the best. Its been the most useful resource in my Mac OS X Server installations.

http://www.macosxlabs.org/ could be handy.

It depends what kinda stuff you're looking to do.
E.g: if you want to get a mail server under OS X going, Apple's documentation is top notch.
http://www.apple.com/itpro has lots of info on server related stuff.
