Tried to do it in iTunes but it seems to still give me a m4a file.

What other software solutions are out there?

Hmm, that seems odd. When you tried to convert it, it says "Convert selection to mp3" in the "Advanced" menu, correct?

Its not DRM protected is it? EG: Bought from the iTunes store? If it is.. You cant..

However.. It sounds like you have your rip settings set to AAC, you need to change this to MP3 before the "Convert to MP3" option appears when you right click or control click the song..

Go into your options, under Advanced->Importing, change the format to MP3.

Trying...
it's for podcasts produced in GarageBand then exported to iWeb.
Thats no sweat, except the resulting m4a's aren't easily shared with PC people that aren't too techno - at least thats the feedback I've recieved.
Hence the iTunes detour. But.. no go so far:o

Yeah, that must be it.

I use iTunes to batch convert between WAV, MP3 and AAC (MP4) all the time. Is good.
