Why not do an incremental update straight from your device? My iPad only needed a 42MB file to get to 5.1.1 (from 5.1).
Is this update worth the trouble?
When I was first alerted the download time was 32 hours!!
It's now down to 18 hours!!
I can download a similar sized file max 10 minutes, from anywhere else.
Can we get it any other way other than via iTunes sssllloooowwwww servers?

Yes, do the incremental update straight from your iPhone/iPad from Settings/General/Software_Update
It appears to have resolved the messages that I was getting when updating apps, that it can't download ......... apps (which were, so it didn't worry me, just annoyed me).
Excuse my ignorance but how do I force the system to do that?
I normally download one and then upgrade our 3 iPhones and 2 iPads from the 1 download

If your devices aren't on 5.0 or higher, you won't be able to do incremental updates. You can download the full 5.1.1 update files from here: iOS 5.1.1 Released [Direct Download Links]

My devices are all 5.1
Just tried my iPhone again and 25 minutes and the white bar has hardly shifted !!
I don't believe that is an incremental update that is happening
